Season beef generously with salt and pepper. Set out of the fridge for about 30 minutes so it can get to room temperature, if possible
Preheat grill to 375ºF
After grill grate is hot, place steak on grill and sear for about 5 minutes per side, cooking until medium rare. If you have a probe thermometer, remove steak once the center reaches an internal temperature of 130ºF
Let steak rest for 10 minutes then slice as thin as possible, a very sharp knife helps
Au Jus
In a saucepan, combine french onion soup, beef broth, sugar, Worcestershire, salt, and water. Bring the mixture to a boil over medium heat
After Au Jus mixture has been brought to a boil, reduce heat to simmer. After 8 minutes, taste sauce and season with salt and pepper to taste
Spread horseradish sauce on the bottom side of each roll or hoagie. Dip steak slices in the warm Au Jus and then place slices on the bottom of the hoagie on top of the horseradish
Place provolone cheese slices on top of the steak slices. Season to taste with salt and pepper
Transfer remaining Au Jus to dipping bowls and serve alongside sandwiches. Enjoy!
